Discovering Quinoa - Part 2 - Breakfast Bowl & Caramel Pears
/I'm still working on the bulk-size bag of Quinoa that my hubby brought home from a Costco haul. It seems like this bag isn't going anywhere. We have had quinoa with chicken, quinoa with lamb, quinoa with shrimp, and now quinoa for BREAKFAST!!!! Also made a sweet treat for a morning dessert, Caramel Pears!

Quinoa Breakfast Bowl 2016 - tev
Cheesy Quinoa Breakfast Bowl
Ingredients:
1 cup Quinoa, rinsed 1 Egg, fried, poached or hard boiled
2 cups Chicken (or Vegetable) Broth Crispy Bacon
Shredded Cheese Guacamole
Sour Cream (my favorite is Daisy) Sriracha or other hot sauce - to taste
Instructions:
In a saucepan, bring chicken broth to a boil. Add quinoa, cook until the seeds are chewy and there is a white thread evident.
Prepare egg as preferred, I prefer fried with a slightly watery yolk. Fry and crumble bacon slices.
In a bowl, layer quinoa on the bottom, cover with cheese of choice. Then add bacon, egg, sour cream, and guacamole. Top with sriracha, and ground pepper to taste.
Homemade Caramel Pears
Ingredients:
1/2 stick of Butter 1 cup of Sugar (preferably brown) Pinch of Salt
1/2 cup Milk (or half & half) 3 ripe Pears washed and sliced
1/2 teaspoon Cinnamon 1/2 teaspoon Nutmeg
Instructions:
Start making the caramel first, this will take about 30 minutes cook. In a saucepan, combine sugar, butter, and milk on medium heat. Stir regularly and bring to a boil. When caramel becomes golden brown and thick, turn off heat.
Wash and slice ripe pears, in a bowl, mix in cinnamon, nutmeg, and salt. Preheat frying pan with a quarter sized portion of olive oil. Add pears to frying pan and cook pears until soft.
In a dessert bowl, layer pears. Then pour caramel on top. Great with ice cream and nuts!
